Our zero waste kitchen – Rice cake
For those of you that have just tuned in, besides trying to buy our food package free and locally produced we also have been swapping to gluten free flours.
So as a base cake we decided to try out an all rice flour cake. You can check out other gluten free recipes; tropical fruit pie, banana bread, crepes, pancakes, pizza, as well as our gluten free flour mix.
This is a very simple recipe, as always you can modify some of the ingredients.
- 250g glutinous rice flour
- 1 tbsp baking powder
- 1 ½ cups of milk (coconut milk is a great option too)
- 3 eggs
- ¼ cup coconut oil (or any other vegetable oil)
- 1 cup brown sugar
Instructions: Preheat oven to 220C. And grease a cake pan. Mix all the ingredients in a big bowl until the batter is smooth, you can add finely cut pieces of fruit like pineapple or bananas (about 1 cup). Pour the batter into a pan and bake for 45 minutes (poke with a knife and see if it comes out clean to know when it is done). Decorate to taste and enjoy!
